Perfect for the lover -as I am- of raised cakes especially for breakfast!
An option from Roses Cake or Brioches (that I’ve shared in this post Here)
You can choose if you prefer the jam filling or the chocolate one, in that case I’ve used chocolate cream (Nutella is too sweet for my taste I usually use Novi cream or other noisette and cocoa creams you can spread).
Ingredients:
3 cups flour
1 teaspoon instant yeast
1/4 cup granulated sugar
1/2 teaspoon kosher salt
2/3 cup warm milk
2 eggs at room temperature, beaten
4 tablespoons unsalted butter, melted and cooled
1/4 cup noisette and cocoa cream (such as Novi cream if you buy it
Directions:
Combine in the mixer the flour, instant yeast and sugar, and use a handheld whisk to blend well. Add the salt and whisk to mix well. Add the milk, eggs and butter, and mix on low speed with the dough hook until combined. Raise the mixer speed to medium and knead for about 5 minutes. The dough obtained is smooth, enriched. It climbs up the dough hook during kneading but remains intact and smooth. Spray a silicone spatula lightly with cooking oil spray, and scrape down the sides of the bowl. Transfer the dough to a lightly oiled bowl or proofing bucket large enough for the dough to rise to nearly double its size, spray the top of the dough with cooking oil spray, and cover with an oiled piece of plastic wrap. Set the covered dough to rise in a warm, draft-free environment for about 1 hour. Once it has risen, place it in the refrigerator for at least 15 minutes or until it is chilled. This will make it much easier to handle.
At this point you have to stretch out the dough with a rolling pin and add the layer of chocolate cream. Roll over to obtain a big roll and at the end cut it on top in its center but not at all. Cover a rectangular pan as the one for the plumcake with paper and put inside your filled dough. Cover the dough loosely with plastic wrap, and place in the refrigerator to chill for about 10 minutes.
With a sharp knife or pizza wheel, beginning about 1-inch from one end of the roll of dough, slice along the length of the dough all the way through to the end. You will have 2 strands of layered dough. Beginning at the intact end, twist each strand gently so that the cut sides of the dough are facing up. Braid the strands gently but securely back and forth over one another until you reach the end. You should have 4 twists before you reach the end. Cinch the open ends together and tuck them under the bread slightly. Place one hand on each end of the braid, and press the ends gently toward one another to create a slightly wider, shorter braid. Invert the braid onto a piece of parchment paper on top of a cutting board, then invert the prepared loaf pan over the top of the bread dough, covering the braided dough completely. Quickly re-invert the whole operation—from the loaf pan all the way down to the cutting board—and remove the cutting board and top parchment paper. Cover the dough with a piece of oiled plastic wrap, and place in warm, draft-free location to rise only until just beginning to swell (about 20 minutes, but it could be more if your rising environment is particularly cold and/or dry).
Finally you can bake it for 25 minutes at 365°F in pre-heated oven.

Perfetta per gli amanti dei dolci lievitati e ideale per colazioni che danno la giusta energia per affrontare la giornata! Questa versione alternativa della classica torta di rose oppure delle brioches fatte in casa (troverete un mio vecchio post qui) è una treccia a strati di crema al cioccolato, morbida e soffice!
Ingredienti:
420 g farina
3 g lievito in polvere
50 g zucchero non raffinato
3 g sale
150 ml latte tiepido
120 g uova sbattute a temperatura ambiente
56 g burro sciolto
Crema spalmabile al cacao o nocciola (se la comprate: crema Novi)
Procedimento:
Unire nel mixer farina, lievito e zucchero . Aggiungete il sale e frullate per amalgamare il composto omogeneamente. Aggiungete il latte, le uova ed il burro e mescolare con il mixer a bassa velocità fino a quando tutti gli ingredienti non si saranno amalgamati completamente. Aumentate la velocità del mixer gradualmente ed impastate per circa 5 minuti. L’impasto che otterrete deve essere liscio ed omogeneo. Trasferite l’impasto in una ciotola leggermente unta d’olio abbastanza capiente da contenere l’impasto una volta lievitato e raddoppiato nelle sue dimensioni. Spruzzare la parte superiore della pasta con un po’ di olio e coprire con un pezzo di pellicola trasparente. Lasciar riposare l’impasto coperto per farlo lievitare al meglio tenendolo in un ambiente caldo, senza correnti o sbalzi d’aria, per circa 1 ora. Una volta lievitato metterlo in frigorifero per almeno 15 minuti o fino a quando si è raffreddato. In questo modo sarà molto più facile da gestire durante lo step di lavorazione successivo.
A questo punto stendere la pasta con il matterello e aggiungere lo strato di crema al spalmabili al cioccolato/nocciola. Arrotolare il tutto per ottenere un maxi rotolo. Coprire una teglia rettangolare, come quello per il plumcake con carta da forno e lasciarvi riposare all’interno il vostro impasto farcito di crema. Coprite il tutto con della pellicola e mettete in frigorifero a raffreddare per circa 10 minuti.
Con un coltello affilato tagliate il maxi rotolo in due in modo da ottenere due strisce uguali attaccate alla loro estremità, quindi iniziate con l’incisione dopo qualche cm dall’inizio del vostro rotolo. In questo modo avrete due lunghe estremità attaccate alla cima che facilmente serviranno creare la vostra treccia. Girate verso l’alto la parte interna del rotolo in modo da avere verso l’alto le striature interne di pasta alternate alla crema. A questo punto potete iniziare ad intrecciare e creare la vostra treccia. Coprire l’impasto con un pezzo di pellicola trasparente oliato, e mettere in un luogo caldo per circa 20 minuti per un’ultima fase di lievitazione.
Infine potete cuocere per 25 minuti a 180 ° C nel forno preriscaldato.
