Risotto is a classic in our diet and cooking tradition but if we add a small ingredient, such as fresh mint, we can obtain a renovated recipe to taste… above all in summer period! Tasty and fresh with a topping of confits little tomatoes.
For the Risotto follow my previous recipe here…for the toasting initial phase and the cooking second phase in the homemade stock.
During cooking add the pepper cream made from peeled peppers, mixed until obtain a smooth cream (using a mixer) and salted. I suggest you to cook the peppers before mix them on the fire until the peel will be totally burnt. Then you have to remove it and mix the cooked peppers (reds are better for the color result of the risotto).
At the end of the cooking time of the rice, add and blend the pepper cream, a cup of parmesan cheese (grated before) and fresh mints lightly sliced. At this point cook until creamy.
As decoration I’ve added at the end some cubes of mozzarella cheese that quickly melt on the top of the hot risotto, and confits tomatoes! To prepare them you need small tomatoes, the “dates” kind. Slice them and fry them in a frying pan with enough oil and high fire. Than, when they’re a bit dried and well cooked add a bit of salt and a teaspoon of brown sugar to caramelized them! If you’ll keep the fire high they’ll remain well separated and the won’t melt.

Una soluzione per adattare il risotto all’estate in modo da avere una ricetta tradizionale più fresca a “moderna”. Vi basterà aggiungere un po’ di menta fresca per dare un tocco di gusto e originalità in più al vostro piatto!
Per la cottura del risotto in brodo fatto in casa seguite il mio post precedente qui mentre a parte potete cuocere i peperoni (preferibilmente rossi per il colore finale del piatto) bruciandoli sulla griglia a diretto contatto con la fiamma. Rimuovete la pelle carbonizzata e frullati peperoni cotti senza buccia in modo da ottenere una crema che andrà aggiunta a fine cottura nel risotto assieme ad un pugno di menta fresca finemente tritata ed una manciata di parmigiano grattugiato. Mantecate il tutto e decorate con cubetti di mozzarella quando il risotto è ancora caldo così da ottenere una base filante su cui disporre i pomodorini confits.
Per questi ultimi prendete dei pomodorini datterini e tagliateli in due, friggeteli a fuoco alto in un’abbondante quantità di olio fino a quando saranno dorati e leggermente essiccati. Tenete la fiamma alta, vi aiuterà a mantenerli intatti senza farli sciogliere. Alla fine caramellate con un cucchiaino di zucchero di canna ed un pizzico di sale a contrasto.
