The softness of the fabrics and the warm colors are a perfect combo with this apple pie really delicious if it’s warm.. with on top a crispy detail of dried apple chips with a chocolate glaze…

Ingredienti:
- 250g di farina 00
- 110g di burro freddo
- 1 pizzico di sale
- 2 tuorli
- 100g di zucchero semolato
- 1 cucchiaino di estratto di vaniglia o 1 bustina di vanillina
- 3 mele medie
- il succo di 1 limone
- 3 cucchiai di zucchero semolato
Ingredients:
- 1 recipe pastry for a 9 inch double crust pie
- 1/2 cup unsalted butter
- 3 tablespoons all-purpose flour
- 1/4 cup water
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 8 Granny Smith apples – peeled, cored and sliced
Directions:
- Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
- Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
- Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.
- For the chips clean and slice really thin the apples and let them dry in the oven for 1 hour at 80°C and for two hours at 60°C. then melt the white chocolate and cover the dried apple slices. leave them dry in the oven until the chocolate glaze is cold.
Procedimento:
- Unire la farina e il burro freddo a pezzi. Mescolare per 30 secondi/1 minuto in modo che la farina assorba il burro. Non frullare troppo altrimenti il burro si riscalderà e la frolla rischierà di “impazzire”.
- Trasferire il composto su un piano di lavoro. Aggiungere lo zucchero e il sale, quindi fare un buco al centro e versare anche i tuorli e il cucchiaino di estratto di vaniglia (o la bustina di vanillina). Lavorare energicamente con le mani fino a formare un panetto di pasta liscio e compatto.
- Cuocere per 10 min circa le mele mentre la pasta frolla riposa in frigo.
- Stendere la pasta e bucherellarla, farcire con le mele cotte ed infornare a 180° per 35 minuti.
- Per le chips di mela vi basterà lavare e togliere il torsolo alle mele, tagliarle a fette sottilissime ed essicarle in forno per 1 ora a 80° ventilato. Successivamente per altre due ore a 60°. Sciogliete a bagnomaria il cioccolato bianco e immergete le fette. Lasciatele asciugare in forno su una teglia rivestita di carta da forno finchè non saranno croccanti.
